Avocado stuffed chicken breasts are a flavorful and satisfying dinner that looks impressive but is surprisingly easy to make. Tender chicken breasts are filled with a fresh mixture of avocado and sun dried tomatoes, then seared until golden and finished in the oven.

The filling is simple but packed with flavor. Diced avocado adds a creamy texture, while chopped sun dried tomatoes bring a slightly sweet and tangy taste that pairs beautifully with the chicken.
For the best results, it is recommended to use sun dried tomatoes that are packed in oil. They tend to be softer and more flavorful, making them perfect for mixing into the filling.
A little fresh cilantro and a pinch of salt help bring all the ingredients together. The mixture is gently tossed until evenly combined, creating a fresh and vibrant stuffing for the chicken.
Each chicken breast is carefully filled with the avocado mixture and secured with toothpicks to keep the filling in place while cooking. This helps the chicken hold its shape and keeps the flavorful center intact.

The chicken is first seared in a skillet to develop a golden crust, then transferred to the oven to finish cooking. This method keeps the outside nicely browned while allowing the chicken to stay juicy and tender inside.
The result is a delicious chicken dish with a creamy, flavorful filling that adds a fresh twist to a classic baked chicken dinner. It is a great option for both weeknight meals and special occasions.
Avocado Stuffed Chicken Breasts
Avocado stuffed chicken breasts are a flavorful and satisfying dinner that looks impressive but is surprisingly easy to make. Tender chicken breasts are filled with a fresh mixture of avocado and sun dried tomatoes, then seared until golden and finished in the oven.
Ingredients
- 4 large chicken breasts
- All Purpose Seasoning Blend, see notes
- 1 large avocado, diced
- 1/4 cup sun dried tomato strips in oil, drained and diced
- 2 tbsp chopped cilantro
- 1/4 tsp salt
- 1 to 2 tbsp extra virgin olive oil
Instructions
- Preheat the oven to 425°F (220°C).
- Using a sharp knife, carefully cut a pocket into the side of each chicken breast. Season both sides of the chicken breasts evenly with the seasoning blend.
- In a small bowl, combine the diced avocado, sun-dried tomatoes, cilantro, and salt. Divide the mixture evenly and stuff it into the pockets of each chicken breast. If needed, secure the openings with toothpicks.
- Heat a large cast-iron or oven-safe skillet over medium heat. Add the olive oil and, once hot, sear the chicken breasts for about 3 minutes on each side, until golden brown.
- Cover the skillet with aluminum foil and transfer it to the preheated oven. Bake for 15–17 minutes, or until the chicken reaches an internal temperature of 155°F.
- Remove the skillet from the oven and keep it covered for 5 minutes to allow the juices to settle. Remove the toothpicks before serving and enjoy.
