Make the Tomato Bruschetta Topping

  1. Core and dice the tomatoes (or use a food chopper). Drain any excess juice, then transfer the tomatoes to a medium bowl.
  2. Chop the basil by stacking the leaves, rolling them into a tight tube, and slicing them thinly with a sharp knife to create ribbons. Add the sliced basil to the bowl with the tomatoes.
  3. Finely mince 5 garlic cloves. Mix 1 teaspoon of the minced garlic with 3 tablespoons olive oil and set aside to infuse. Add the remaining minced garlic to the bowl with the tomatoes.
  4. Season the tomato mixture with 2 tablespoons olive oil, 1 tablespoon balsamic vinegar, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Stir gently to combine, then let the mixture sit for 30 minutes to allow the flavors to marinate.


Make the Bruschetta Toasts

  1. Preheat the oven to 400°F (205°C) with a rack in the center.
  2. Place the bread slices on a parchment-lined baking sheet. Cut the bread into 1/2-inch thick slices, slicing diagonally for classic bruschetta pieces.
  3. Brush both sides of the bread with the garlic-infused olive oil. Sprinkle the tops lightly with Parmesan cheese.
  4. Bake at 400°F for 5 minutes, then switch the oven to broil on high for 1–2 minutes, or until the edges turn golden brown.


To Serve

  1. Arrange the toasted bread on a serving platter and place the tomato mixture in a separate bowl. Spoon the tomato topping over the toasts just before serving. Finish with a drizzle of extra virgin olive oil and balsamic glaze.
