Ingredients

  • 2 cups cooked chicken, shredded (rotisserie chicken works great!)
  • 2 cups shredded cheddar cheese
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup red onion, chopped
  • 1/2 cup barbecue sauce, your favorite kind
  • 4-5 large flour tortillas
  • 2 Tablespoons oil, (vegetable or canola oil)

Instructions

  1. In a mixing bowl, combine the chicken, cheese, onion, cilantro, and BBQ sauce. Toss until evenly coated, adding more BBQ sauce if needed to taste.
  2. Spoon about 1/2 cup of the mixture onto each tortilla. Roll tightly from one end, folding in the sides as you go, similar to a burrito.
  3. Heat a skillet over medium-high heat and add just enough oil to lightly coat the bottom, or use cooking spray. Once hot, place the wraps seam-side down in the pan.
  4. Cook, turning every 1–2 minutes, until the wraps are golden, crispy on all sides, and heated through.
  5. Serve immediately.
