Ingredients

  • 2 boneless skinless chicken breasts (cut into 1 inch pieces)
  • 1 teaspoon minced garlic
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • ½ onion chopped
  • 3 cups chicken broth
  • 1 can cream of chicken soup (10.5 oz can)
  • 1 ½ cup brown rice (uncooked)
  • 2 cups cheddar cheese (shredded)

Instructions

  1. Add the chicken pieces, minced garlic, salt, black pepper, chopped onion, chicken broth, cream of chicken soup, and uncooked brown rice to the crock pot.
  2. Stir well to evenly combine all of the ingredients.
  3. Cover and cook on HIGH for 3 1/2–4 hours, or until the rice is tender and has absorbed the broth.
  4. Stir in the shredded cheddar cheese, then cover again and let the residual heat melt the cheese for 5–7 minutes.
  5. Give everything a final stir, then serve warm and enjoy.

Notes

  • Brown rice is highly recommended for this recipe because it holds up well during the longer cooking time in the crock pot. White rice is not ideal, as it tends to become overly soft and mushy.
  • If the finished dish is thicker than you'd like, gradually stir in additional chicken broth at the end of the cooking time until you reach your preferred consistency. Add the broth about 1/4 cup at a time, stirring well after each addition.
