Ingredients
- 1 lb chicken breasts (2 chicken breasts, cut in half crosswise)
- 8 oz fresh spinach
- 8 oz Monterey Jack cheese (shredded)
Creamy Sauce:
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/2 cup parmesan cheese (grated)
- 1/2 tsp ground black pepper
- 1 tsp garlic salt
Instructions
- Preheat the oven to 500°F. Lightly spray a 13 x 9-inch baking dish with cooking spray and set aside. Meanwhile, combine the creamy sauce ingredients.
- Next, pack the casserole dish with the spinach. Top with uncooked chicken breasts.
- Spread evenly with the creamy sauce mixture.
- Sprinkle with shredded Monterey Jack cheese and bake on the bottom rack of the preheated oven for 20-25 minutes or until spinach shrinks and chicken breasts cook thoroughly.
