Ingredients
For Chicken Thighs:
- 5 chicken thighs skinless & boneless, dried with paper towel
- 1 teaspoon 21 Salute Seasoning from Trader Joe's or use any poultry seasoning of your choice
- salt & pepper to taste
- 2 tablespoons butter unsalted
For Creamy Sauce:
- 2 tablespoons butter
- 2 tablespoons garlic finely chopped
- 2 tablespoons flour
- 1 cup chicken broth
- ½ cup heavy whipping cream
- ½ cup Parmesan cheese or prieve cheese, finely grated
- salt & pepper to taste
- 2 teaspoon dill finely chopped for garnish, optional
Instructions
- Preheat the oven to 375°F.
- Season the chicken thighs on both sides with the seasoning blend, salt, and pepper.
- In a large oven-safe skillet over medium heat, melt the butter. Add the chicken thighs and sear for 2–3 minutes per side, or until golden brown. Transfer the chicken to a plate and set aside.
- To make the creamy sauce, melt more butter in the same skillet. Add the garlic and sauté for about 1 minute, stirring a few times, until fragrant.
- Sprinkle in the flour and stir continuously for 1 minute to cook off the raw flour taste.
- Slowly pour in the chicken broth, stirring constantly, and cook for about 1 minute, or until the sauce begins to thicken.
- Stir in the heavy whipping cream, then add the cheese and mix until smooth and creamy. Taste the sauce and adjust with more salt or pepper if needed.
- Return the chicken thighs to the skillet, spooning some of the sauce over each piece so they’re well coated.
- Transfer the skillet to the oven and bake uncovered for 30–35 minutes, or until the chicken is cooked through.
- Garnish with fresh dill and extra cheese if desired, then serve warm and enjoy.
Notes
- Pat the chicken dry before seasoning. Removing excess moisture helps the seasoning stick better and gives the chicken a much better golden sear.
- Butter is my favorite for sautéing the garlic and browning the chicken because it adds a lot of rich flavor, but olive oil works well too if you prefer.
- For the best texture and even cooking, brown the chicken in batches if needed. Overcrowding the skillet can cause the chicken to steam instead of sear, which affects both the crust and overall flavor.
