Ingredients

  • 1 lb chicken breasts (2 chicken breasts, cut in half crosswise)
  • 8 oz fresh spinach
  • 8 oz Monterey Jack cheese (shredded)

Creamy Sauce:

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup parmesan cheese (grated)
  • 1/2 tsp ground black pepper
  • 1 tsp garlic salt

Instructions

  1. Preheat the oven to 500°F. Lightly spray a 13 x 9-inch baking dish with cooking spray and set aside. Meanwhile, combine the creamy sauce ingredients.
  2. Next, pack the casserole dish with the spinach. Top with uncooked chicken breasts.
  3. Spread evenly with the creamy sauce mixture.
  4. Sprinkle with shredded Monterey Jack cheese and bake on the bottom rack of the preheated oven for 20-25 minutes or until spinach shrinks and chicken breasts cook thoroughly.

Notes

  • Use a baking dish safe for an oven temperature of 500°F like a heavy dutch oven baking dish.
