- 4 6-oz boneless skinless chicken breasts
- 2 teaspoon italian seasoning
- 1 teaspoon kosher salt
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon ground pepper
- 1-2 tablespoon olive oil
Bruschetta:
- 3-4 medium ripe tomatoes (about 1 lb), cored, seeded, and chopped to a ½” dice
- 1 teaspoon kosher salt
- 2 cloves garlic, minced
- 1 tablespoon extra virgin olive oil
- 2 teaspoon balsamic vinegar
- 2 tablespoon thinly sliced basil leaves
- ground pepper, to taste
- balsamic glaze, to taste, optional
Instructions
- Prepare the bruschetta first. In a mixing bowl, combine the chopped tomatoes with the salt and garlic. Stir well and let the mixture sit while you cook the chicken so the flavors can develop.
- Next, prepare the chicken. Place one chicken breast on a sheet of parchment paper and fold the paper over it. Using a rolling pin, pound the chicken to an even thickness, just under 1 inch. Set aside and repeat with the remaining breasts.

Remove from the oven and allow to rest for 5 minutes. - To finish the bruschetta topping, stir in the olive oil, balsamic vinegar, fresh basil, and freshly ground pepper. Taste and adjust with additional salt, pepper, or vinegar if needed.
- Spoon the bruschetta mixture over the cooked chicken and serve immediately.
