Honey Chipotle Grilled Chicken Skewers

These Honey Chipotle Chicken Skewers are bursting with bold flavor and are incredibly versatile! The chicken is marinated in a mouthwatering blend of honey, chipotle, soy sauce, and apple cider vinegar — creating the perfect balance of sweet, spicy, salty, and tangy.

Once skewered and grilled to juicy perfection, these skewers make an ideal summer appetizer or finger food. Enjoy them hot off the grill or use the tender chicken in salads, sandwiches, tacos, or bowls! Make a double or triple batch—trust me, you’ll want extras. Use the leftover marinade (reserved separately) for basting, dipping, or even as a bold salad dressing!

Ingredients

  • 1/4 cup honey
  • 1/4 cup chipotle chilies and adobo sauce (from a can)
  • 2 tablespoons apple cider vinegar (or lime juice)
  • 1 tablespoon soy sauce
  • 3 cloves garlic, minced
  • 1 teaspoon cumin, ground
  • 1 teaspoon cumin, ground
  • 1 pound boneless and skinless chicken breasts or thighs, cut into bite sized pieces
  • 1 pound boneless and skinless chicken breasts or thighs, cut into bite sized pieces

Instructions

  1. Puree the honey, chipotle chilies and adobo sauce, vinegar, soy sauce, garlic and cumin in a food processor.
  2. Marinate the chicken in half of the honey chipotle sauce for 20 minutes to overnight.
  3. Skewer the chicken and grill over medium-high heat until slightly charred and cooked, about 2-5 minutes per side.
  4. Serve with the remaining honey chipotle sauce for dipping!

Notes

  • The spicy heat in this recipe comes from the chipotle chilies in adobo. If you like it milder, use less (start with one, taste test the pureed sauce and add more as desired), and if you like it hot, you can use more!
  • Tip: Soak wooden skewers in water before using to help prevent them from charring.
  • Option: Add 1 teaspoon Worcestershire sauce to the sauce.
  • Option: Replace the honey with maple syrup.
