Ingredients

  • 2 pounds boneless, skinless chicken breasts about 4 medium size breasts
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika or chili powder

Instructions

  1. Preheat the oven to 450°F. Lightly pound the chicken breasts so they are even in thickness.
  2. Pour the olive oil into a 13 × 9-inch baking dish. Lightly coat the chicken with the oil, then arrange the breasts side by side in the dish. Be sure the baking dish you use is safe for high temperatures.
  3. In a small bowl, whisk together the salt, pepper, garlic powder, onion powder, and chili powder (or paprika). Sprinkle the seasoning mixture over both sides of the chicken and rub it in gently with your hands.
  4. Bake in the preheated oven for 15–20 minutes, or until the juices run clear and a meat thermometer registers 160–170°F. Cooking time may vary depending on the size and thickness of the chicken breasts. Mine were pounded to less than 1 inch thick.
  5. Remove from the oven, cover loosely with foil, and let the chicken rest for 5–10 minutes before slicing and serving so the juices can redistribute.

Notes

  • Refrigerator: Store leftover cooked chicken breasts in an airtight container in the refrigerator for up to 4 days. They’re great for meal prep and can easily be added to salads, soups, and other quick meals throughout the week.
  • Freezer: Let the chicken cool completely, then store in an airtight container in the freezer for up to 6 months. For easier portioning, wrap each chicken breast individually in wax paper before freezing.
