Ingredients

  • 1 lb. baby red potatoes, quartered
  • 12 oz. fresh green beans, trimmed
  • 3 large boneless skinless chicken breasts, pounded to an even thickness (using a rolling pin or heavy pan)
  • 1 1/2 tbsp Tastefully Simple® Avocado Oil, divided
  • 1 tbsp Tastefully Simple® Seasoned Pepper
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/3 cup mayo
  • 1/4 cup shredded parmesan cheese
  • 1 1/2 tbsp Tastefully Simple® Spinach & Herb Seasoning

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Grab a large rimmed baking sheet and add the quartered baby red potatoes and green beans. Drizzle with 1 tablespoon avocado oil, then use your hands to toss everything until evenly coated. Season with 1/4 teaspoon salt and 1 tablespoon seasoned pepper. Spread the potatoes on one side of the baking sheet and the green beans on the other, leaving space in the center for the chicken.
  3. Place the chicken breasts in the open space on the baking sheet. Drizzle with 1/2 tablespoon avocado oil, then season both sides with the remaining salt and 1/4 teaspoon black pepper.
  4. In a small bowl, whisk together the mayonnaise, Parmesan cheese, and Spinach & Herb seasoning. Spread this mixture evenly over the top of the chicken breasts.
  5. Bake for 22–25 minutes, or until the chicken reaches an internal temperature of 160°F. If desired, turn the broiler on high for the last 1–2 minutes to lightly brown the cheesy topping, watching carefully so it doesn’t burn.
  6. Remove from the oven and let the chicken rest for 5 minutes before serving. Enjoy!
