This 30-minute Tuscan sausage pasta is one of those easy dinner recipes that feels like pure comfort at the end of a long day. With its creamy sun-dried tomato sauce, it’s simple enough for a weeknight but special enough to serve when you have company.

This is the kind of pasta where you’ll find yourself sneaking spoonfuls of the sauce before the noodles are even done cooking. The Tuscan-inspired combination of sun-dried tomatoes, garlic, fresh spinach, and basil is rich, flavorful, and completely irresistible.
What makes this dish especially lovable is how effortlessly it comes together while still feeling a little elegant. That decadent Tuscan cream sauce coats every bite beautifully, and the Italian sausage adds so much savory flavor. It’s easy to see why sausage and pasta are such a perfect match here.
It’s also one of those recipes that tends to become a repeat favorite. One lovely reader even called it their “all-time favorite dinner to cook,” which says a lot about just how comforting and crave-worthy this pasta really is.
If you want to switch things up, mild Italian sausage works beautifully, but hot Italian sausage is a great option if you’d like a little extra heat. You can also add a pinch of cayenne or a few red pepper flakes to give the sauce more of a kick without changing the heart of the recipe.

This creamy sausage pasta is also flexible when it comes to the noodles, so feel free to use whatever pasta you already have on hand. And if you’re in the mood to make it feel even more special, homemade pasta would be a lovely touch.
For the best texture and flavor, it’s best not to swap the heavy cream for a lower-fat alternative. The sauce won’t turn out quite as rich, may not thicken the way it should, and could even curdle, so sticking with the heavy cream really gives this dish the creamy finish it’s meant to have.

Notes
- I use julienned sun-dried tomatoes packed in oil for this recipe, and I drain them well before adding them to the pan.
- For the sausage, I use 3 sausages from a 5-pack of Johnsonville mild Italian sausages, but anything close to that weight will work just fine.
