Chicken Corn Chowder

This Chicken Corn Chowder is a comforting, flavorful bowl filled with juicy chicken, potatoes, and corn in a well-seasoned broth. It’s finished with crispy bacon and green onions, making every spoonful rich and satisfying. You can also make it using fresh chicken or leftover rotisserie chicken.

This Chicken Corn Chowder has become a true favorite, and it’s easy to see why. It’s the kind of recipe that feels extra comforting and ends up earning a permanent spot on the go-to list.

It all starts by cooking crispy bacon right in the soup pot, which sets up a deeply flavorful base. The bacon drippings are then used to build a roux that helps thicken the chowder and add even more depth to the broth.

The flavor comes together from a mix of seasonings, along with jalapeño and red bell peppers, tender chicken, golden potatoes, and sweet corn. Everything is topped off with green onions and chopped bacon for that final touch.

For storage, it keeps well in the refrigerator for up to 3 days or can be frozen for up to 3 months. When reheated, the texture may be a bit thinner, but the flavor stays just as delicious.
