Ingredients

  • 4 cups shredded chicken, from 2 large chicken breasts, (16 oz by weight)
  • 2 large eggs
  • 1/3 cup mayonnaise
  • 1/3 cup all-purpose flour
  • 3 Tbsp fresh dill, finely chopped (or 1 Tbsp parsley)
  • 3/4 tsp salt or to taste
  • 1/8 tsp black pepper
  • 1 tsp lemon zest, plus lemon wedges to serve
  • 1 1/3 cups mozzarella cheese, shredded
  • 2 Tbsp olive oil to saute, divided
  • 1 cup Panko bread crumbs

Instructions

  1. In a large mixing bowl, whisk together the eggs, mayonnaise, flour, fresh dill, salt, black pepper, and lemon zest until smooth.
  2. Add the shredded chicken and shredded mozzarella, then stir until the chicken is evenly coated in the mixture.
  3. Cover the bowl and refrigerate for at least 30 minutes. Chilling the mixture will make it easier to shape the patties.
  4. Using a trigger-release ice cream scoop or cookie scoop, portion the mixture into 12–15 equal mounds. Shape each portion into a patty about 1/2 inch thick, then coat both sides with Panko breadcrumbs.
  5. Heat a large nonstick skillet over medium heat and add 1 tablespoon of olive oil. Place half of the patties in the skillet and cook for 3–4 minutes per side, or until golden brown and cooked through. Add more oil as needed and repeat with the remaining patties.
  6. As soon as the patties come off the heat, lightly sprinkle them with salt and squeeze fresh lemon juice over the top.
  7. Serve warm.
