Easy Dublin Coddle Recipe

Dublin Coddle is a homey dish made of just a few simple ingredients. It’s a traditional Irish potato and sausage stew that slow cooks in the oven. Not just for St. Patrick’s Day, you can serve this recipe year-round for breakfast, lunch, or dinner.

The flavor of the broth of this Dublin Coddle is pretty amazing. I’m pretty sure it has something to do with the smoky flavor of the bacon in this stew.
