Ingredients
- 1 tablespoon olive oil
- 1/2 cup diced celery
- 1/2 cup diced carrots
- 3/4 cup diced onion
- 1 1/2 cups wild rice blend
- 2 2/3 cup vegetable broth
- 1 – 2 tablespoons fresh parsley
Instructions
- Heat the olive oil in a large skillet or saucepan over medium-high heat. Add the celery, onion, and carrot, and sauté, stirring occasionally, until the vegetables are softened and the onion is translucent, about 5 minutes.
- Add the rice and stir to coat it in the oil. Cook for 1–2 minutes, allowing the rice to lightly toast and absorb the oil.
- Pour in the broth and stir to combine. Cover the pan and bring the mixture to a boil.
- Once boiling, immediately reduce the heat to low and let the rice simmer for 45–50 minutes, or until tender and most of the liquid has been absorbed.
- Remove the pan from the heat and let it rest, covered, for 5–10 minutes. This allows the rice to finish absorbing any remaining liquid.
- Fluff the rice with a fork and garnish with fresh herbs before serving.
