Notes

Recipe Tips

  • Because this sandwich is packed with melty cheese and rich fillings, cook it low and slow so the bread gets perfectly toasted without burning before the center melts.
  • If you’re only making a couple of sandwiches, a stovetop skillet works great. For larger batches, an electric skillet can make things easier.
  • Since the pepperoni doesn’t fully cook during grilling, microwave it on a paper towel-lined plate for about 20–25 seconds first. This helps remove excess grease before adding it to the sandwich.
  • Feel free to switch up the cheese with white cheddar, Monterey Jack, or Gruyère. You can also add extras like olives, peppers, mushrooms, spinach, bacon, ham, or sausage.

Storage

Store leftovers in an airtight container in the refrigerator for 2–3 days. For longer storage, wrap each sandwich tightly and freeze in a freezer-safe bag for up to 2 months.

Reheating

To reheat from the refrigerator, warm the sandwich in a skillet over medium heat and cover for 1–2 minutes to help melt the cheese, then uncover to crisp the bread.

If reheating from frozen, bake at 350°F for 12–18 minutes, or until heated through and crispy. If the sandwich browns too quickly, loosely cover it with foil while baking.
