This pomegranate white cheddar cheese ball is the kind of Christmas appetizer that instantly steals the spotlight — fun, festive, and pretty enough to make everyone gasp a little when you set it down. Holiday parties are in full swing over here, and honestly, I'm loving every chaotic, glittery minute of it.

Ingredients

  • 2 tablespoons unsalted butter
  • 10 fresh sage leaves
  • 1 (8-ounce) block cream cheese, softened
  • 4 ounces mascarpone cheese, softened
  • 6 ounces freshly grated sharp white cheddar cheese
  • 1/2 cup sliced, toasted almonds
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup pomegranate arils
  • crackers for serving

Instructions

  1. Melt the butter in a skillet over medium heat. Once it starts sizzling, add the sage leaves and cook until crisp, flipping once after about 1 minute per side. Remove the sage and place it on a paper towel to crisp further. Set the infused butter aside.
  2. Add the cream cheese, mascarpone, and cheddar cheese to the bowl of an electric mixer. Beat until well combined, then add the almonds, crispy sage leaves, remaining butter, salt, and pepper. Mix on low speed for about 1 minute, scraping down the sides and bottom of the bowl as needed.
  3. Transfer the cheese mixture to a work surface and shape it into a large ball. Wrap it tightly in plastic wrap and refrigerate for 30 minutes.
  4. While the cheese chills, spread the pomegranate arils over a paper towel and gently pat them completely dry. Leave them uncovered while the cheese chills to remove as much excess moisture as possible. This helps keep the finished cheeseball looking neat.
  5. After 30 minutes, unwrap the cheese and reshape it into a smooth ball. Spread the pomegranate arils on a plate or baking sheet, then roll the cheese ball over them, gently pressing the arils into the surface and filling any cracks or crevices until the entire ball is coated.
  6. The cheeseball can be served immediately or refrigerated until ready to serve. To make it ahead, prepare the cheese ball 1–2 days in advance, but wait until the night before or the morning of serving to add the pomegranate arils. If needed, let the cheese sit at room temperature briefly before coating so the surface becomes soft and sticky enough for the arils to adhere.
