Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/8 teaspoon salt
  • 5 tablespoons unsalted butter, melted
  • 1/2 cup buttermilk
  • 1 large egg white (yolk removed)
  • 3/4 cup canned pumpkin puree
  • 1/2 teaspoon baking soda
  • 2 teaspoons pumpkin pie spice*

For the pumpkin spice frosting:

  • 7 tablespoons unsalted butter
  • 3 tablespoons buttermilk
  • 2 heaping cups powdered sugar
  • 1 teaspoon pumpkin pie spice

Notes

*To make your own pumpkin pie spice, mix 1 tablespoon of ground cinnamon, 2 teaspoons ground ginger, 1 teaspoon ground nutmeg, ½ teaspoon allspice, ½ teaspoon cloves, and ½ teaspoon finely ground black pepper.
