  • 1/2 cup light brown sugar, packed
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon freshly grated nutmeg
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon salt
  • 3 tablespoons all-purpose flour
  • 1 large egg plus 1 teaspoon water, beaten
  • 1 tablespoon Turbinado sugar, for the crust, optional
  • 1 teaspoon flaky sea salt, divided
